One Pan Fajita Pasta Dish

Ingredients

  • 1 onion, chopped
  • 1 pepper, chopped
  • 2 garlic cloves, chopped
  • 1 tin baked beans
  • 1 tin kidney beans, drained and rinsed
  • 1 tin of any kind of beans, I used black beans (drain and rinse them)
  • 1 packet of fajita spice
  • 2 tsp mixed herbs
  • 1 tin chopped tomatoes
  • 200-300g of pasta

Preparation

  1. Add the onion and pepper to pan and fry for five minutes.

  2. Add the garlic to the pan and fry for another minute.

  3. Mix in all the remaining ingredients.

  4. Fill the chopped tomatoes tin up with hot water and pour into the pan, then add another half a tin of hot water. Stir in and place a lid on the pan. Cook for 20-30 minutes or until the sauce has thickened and the water has evaporated.

Tips

  1. You can leave it to cook with minimal attention and it will still turn out well.
