Vegan No-Chicken and Kidney Bean Pasta

Ingredients

  • 1 bag no chicken strips
  • 1 onion, chopped
  • 1 pepper, chopped
  • 2 garlic cloves, chopped
  • 1 tin kidney beans, drained and rinsed
  • 1 tsp oregano
  • 1 tsp mixed herbs
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1 tsp Cajun spice
  • 2 tins chopped tomatoes
  • Plant milk or water

Preparation

  1. Add the chicken strips to a non stick frying pan and cook for five minutes.

  2. Add the onion and pepper, mix in and leave to cook for another five minutes. Stir occasionally.

  3. Add the garlic and kidney beans to the pan. Stir in and leave to cook for a minute.

  4. Add all the spices and herbs along with the chopped tomatoes. Pour a cm of plant milk into each tin and swirl the milk around to help clean out the tin, pour this into the pan. Stir in and leave to simmer for 5 minutes.
