Avocado and Black Bean Quesadillas with Fajita Seasoning

Ingredients

  • 1 small courgette
  • 1 onion
  • 1 pepper
  • 1 garlic clove
  • 3 tbsp fajita spice
  • 1 tbsp syrup (maple, golden, or agave)
  • 1 tsp mixed herbs
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tin black beans
  • 1 avocado
  • Tortilla wraps
  • Hot sauce

Preparation

  1. Add the onion, pepper, garlic, courgette, fajita spice, mixed herbs, black pepper, cumin and syrup to a pan with a little water instead of oil and cook for five minutes.

  2. Add the beans to the pan and cook for another few minutes.

  3. Meanwhile, blend the avocado until mostly smooth.

  4. Pop a frying pan on the hob and put it on a medium-high heat. If you use a non stick pan you don’t need to do oil. Add a wrap to the pan and spread on a spoonful of avocado on a quarter of the wrap. Add some hot sauce and then scoop on the black bean mixture. Fold the wrap in half and then fold in half again. Leave to brown on one side and then flip over. Repeat until all the mixture has been used.
