Easy Veggie Burritos with Black Beans and Avocado

Ingredients

Filling

  • 1 x 400g tin black beans
  • 1 onion
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1-2 garlic cloves
  • 1 Tbsp olive oil

Sides

  • 4 tortilla wraps
  • handful grated cheese
  • 1 avocado
  • 1 cup cooked brown rice
  • 1 small tin sweet corn
  • 2 tomatoes
  • 1 small onion
  • fresh coriander (optional)

Preparation

Method

  1. Fry the onion, garlic and spices in the olive oil.

  2. Add the drained black beans and warm through.

  3. Warm each tortilla wrap in the microwave for 10-20 seconds.

  4. Spoon the black beans, rice, sweet corn and salsa onto the wrap and top with grated cheese and avocado.

Tips

  1. You can cut these into strips for little ones or serve it as a deconstructed burrito.

  2. Leave out the cheese or use vegan cheese to make the recipe vegan.
