Pumpkin Turmeric Soup

Ingredients

  • 1 tbsp of turmeric
  • bay leaf
  • 2 tbsp olive oil
  • salt and pepper
  • oat cream
  • instructions
  • season the onions, garlic, ginger and turmeric with 2 tbsp olive oil.

Preparation

  1. Wash the pumpkin

  2. Cut it in half and remove the seeds with a spoon

  3. If you like, peel the pumpkin and cut into small pieces

  4. Season the onions, garlic, ginger and turmeric with 2 tbsp olive oil

  5. Add pumpkin and bay leaves and pour in vegetable broth

  6. Let it boil and simmer over medium heat for 30 minutes or until the pumpkin is soft

  7. Remove the bay leaf and purée the soup creamy, add liquid according to the consistency

  8. Salts and peppers

  9. Serve with fried onions, roasted bread crumbs , dukkah and oat cream
