Creamy Avocado Pea Soup
Ingredients
- 1 tbsp. olive oil
- 1 small onion
- 4 cloves garlic
- 3 cups peas (can be frozen)
- 1 big avocado
- 1 cup soy milk
- 2 1/2 tsp. salt
- 1 tsp. black pepper
- 1/2 lemon juice
- basil and pumpkin seeds (topping)
Preparation
In a big pot preheat the olive oil over medium high heat
Then add a mashed garlic and simmer for a minute or two
If you have frozen peas soak them under a boiled water for a while
Then add the peas into the pot
Add 1 cup of soy milk and 2 cups of water
Add salt and pepper and bring in to a boil
Simmer for about 10 minutes
In a mean time peel the avocado, take out the pit and cut it into small pieces
Take a hand mixer or transfer everything from the pot into a blender
Add the avocado and blend everything until very smooth mixture
Pour the soup back to the pot
Add half of the lemon juice and preheat the soup
Add more salt or pepper if needed
Serve the soup into bowls and top it with pumpkin seeds, basil, some extra avocado or anything you come up with
