Creamy Avocado Pea Soup

Ingredients

  • 1 tbsp. olive oil
  • 1 small onion
  • 4 cloves garlic
  • 3 cups peas (can be frozen)
  • 1 big avocado
  • 1 cup soy milk
  • 2 1/2 tsp. salt
  • 1 tsp. black pepper
  • 1/2 lemon juice
  • basil and pumpkin seeds (topping)

Preparation

  1. In a big pot preheat the olive oil over medium high heat

  2. Then add a mashed garlic and simmer for a minute or two

  3. If you have frozen peas soak them under a boiled water for a while

  4. Then add the peas into the pot

  5. Add 1 cup of soy milk and 2 cups of water

  6. Add salt and pepper and bring in to a boil

  7. Simmer for about 10 minutes

  8. In a mean time peel the avocado, take out the pit and cut it into small pieces

  9. Take a hand mixer or transfer everything from the pot into a blender

  10. Add the avocado and blend everything until very smooth mixture

  11. Pour the soup back to the pot

  12. Add half of the lemon juice and preheat the soup

  13. Add more salt or pepper if needed

  14. Serve the soup into bowls and top it with pumpkin seeds, basil, some extra avocado or anything you come up with
