Easy Detoxing and Delicious Green Soup

Ingredients

  • 1 can coconut milk
  • 2 cups peas
  • Handful spring onions, chopped
  • 1 tsp fresh thyme leaves
  • 2 cloves garlic, chopped
  • Half onion chopped
  • Juice of 1 lime
  • 1 cup water (or more as desired)
  • 1 cup fresh dark greens plus a handful (e.g., spinach, kale, collard greens)
  • 2 Tbsp nutritional yeast
  • Salt and pepper to taste

Preparation

  1. Sauté the onions and garlic.

  2. Blend all ingredients.

  3. Pour into a pan and heat up or serve cold.

  4. Serve with grains or chickpeas and fresh herbs.

  5. You can heat it up the next day or eat it cold, as it tastes great both ways.
