Vegan Lentil and Chickpea Stew

Ingredients

  • 1 onion
  • 2 carrots
  • 2 potatoes
  • 2 dl red lentils
  • 380 g chickpeas
  • 1 can of coconut milk
  • 2 dl water
  • 1 lime
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 2 tbsp garam masala
  • 1 tsp salt
  • 2 tsp curry

Preparation

  1. Fry the onion, carrots, and potatoes.

  2. Add the coconut milk, water, turmeric, black pepper, garam masala, salt, curry, red lentils, and chickpeas.

  3. Put on a lid and let it boil until everything is done and ready to serve.

  4. Squeeze the lime over the stew before serving
