Vegan Lentil and Chickpea Stew
Ingredients
- 1 onion
- 2 carrots
- 2 potatoes
- 2 dl red lentils
- 380 g chickpeas
- 1 can of coconut milk
- 2 dl water
- 1 lime
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 2 tbsp garam masala
- 1 tsp salt
- 2 tsp curry
Preparation
Fry the onion, carrots, and potatoes.
Add the coconut milk, water, turmeric, black pepper, garam masala, salt, curry, red lentils, and chickpeas.
Put on a lid and let it boil until everything is done and ready to serve.
Squeeze the lime over the stew before serving
