Quinoa Bowl with Raw Veggies

Ingredients

  • 1 cup cooked quinoa
  • 1/2 small onion (ideally red, i only had white)
  • 1/2 pepper (used orange + yellow)
  • a handful of kale
  • a handful of cilantro
  • 1/2 can chickpeas
  • 1/2 avocado
  • 2 tbsp pine nuts
  • dressing:
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • salt and pepper

Preparation

  1. Make the quinoa and set aside

  2. Make the dressing and set aside

  3. Chop all the veggies, mix in the quinoa, toss the dressing and mix well and top with pine nuts and avocado
