Raw Chard Tacos with Mango Habanero Salsa
Ingredients
Filling
- 1 carrot
- 1 green squash
- 1 red bell pepper
- about 2 cups mushrooms
- 1/3 cup pecans
- 1/4 cup chives
- 1 lime
- 1/2 tbsp agave (optional)
- salt
- pepper
- pinch of cumin
- 1/3 cup cilantro
- garlic
Salsa
- 2 juicy mangos
- habanero (to taste)
- half of a lime
- salt
- agave (if too spicy)
- 1 avocado
Preparation
Chop the carrot, green squash, red bell pepper, mushrooms, pecans, chives, cilantro, and garlic into small pieces for the filling
In a bowl, mix the chopped filling ingredients with juice from 1 lime, salt, pepper, and a pinch of cumin; add 1/2 tbsp agave if desired
For the salsa, blend 2 juicy mangos, habanero to taste, half of a lime, salt, agave if too spicy, and 1 avocado until smooth; add water if needed when blending.
Use chard leaves as taco shells and fill them with the prepared filling mixture
Top the filled chard tacos with the mango habanero salsa and serve immediately
