Colorful Salsa-Style Salad with Vinaigrette
Ingredients
- 500 g ripe tomatoes (cherry or regular)
- 1 zucchini
- 1 green bell pepper
- 1 small red onion
- A few handfuls mixed leafy greens
- 1 bunch cilantro
- jalapeno (optional)
Vinaigrette
- juice and zest of 1 lime
- 3 tbsp apple cider vinegar
- 3 tbsp extra virgin olive oil
- 1 garlic clove
- 1 tbsp agave or maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
Preparation
Shake all vinaigrette ingredients in a jar until well combined and set aside.
Dice tomatoes, zucchini and green bell pepper into approximately 1x1 cm cubes.
Finely chop the red onion, cilantro and jalapeno, if using.
Coarsely chop the leafy greens and place on a serving platter. Add tomatoes, zucchini, green bell pepper, onion and jalapeno on top. Stir through and pour the vinaigrette on top.
