Refreshing Summer Peach and Fennel Salad

Ingredients

  • 2 medium fennel bulbs
  • 2 Persian cucumbers
  • 1 1/2 tbsp fresh lemon juice
  • 1/2 tsp Himalayan salt
  • 1 tbsp apple cider vinegar
  • Freshly ground black pepper
  • 2 peaches
  • 1/3 cup mixed basil and mint
  • 2 tbsp pistachios
  • Scoops of FV pesto

Optional

  • Feta crumbles (vegan)

Preparation

  1. In a medium bowl, toss together the fennel, cucumber, vinegar, lemon juice, salt, and several grinds of black pepper

  2. Arrange the fennel mixture on a platter along with the peaches, herbs, pistachios, and scoops of FV pesto
