Refreshing Summer Peach and Fennel Salad
Ingredients
- 2 medium fennel bulbs
- 2 Persian cucumbers
- 1 1/2 tbsp fresh lemon juice
- 1/2 tsp Himalayan salt
- 1 tbsp apple cider vinegar
- Freshly ground black pepper
- 2 peaches
- 1/3 cup mixed basil and mint
- 2 tbsp pistachios
- Scoops of FV pesto
Optional
- Feta crumbles (vegan)
Preparation
In a medium bowl, toss together the fennel, cucumber, vinegar, lemon juice, salt, and several grinds of black pepper
Arrange the fennel mixture on a platter along with the peaches, herbs, pistachios, and scoops of FV pesto
