Colorful Chickpea and Vegetable Salad
Ingredients
- 1 broccoli
- salt and pepper
- 1 can chickpeas
- 1 red bell pepper
- 1/2 yellow bell pepper
- 1 red onion
- 3 handfuls lamb's lettuce
- 7 radishes
- 1 small can of corn
- 3 tablespoons apple cider vinegar
- 1 tablespoon vegetable stock
- 1 tablespoon soy sauce
- 3 teaspoons agave syrup
- 6 tablespoons olive oil
Preparation
Chop the broccoli into small pieces and cook for about 2 minutes.
Wash the chickpeas.
Slice the bell peppers into small cubes.
Cut the onion into small pieces.
Wash the salad.
Mix all together with the other ingredients.
