Colorful Chickpea and Vegetable Salad

Ingredients

  • 1 broccoli
  • salt and pepper
  • 1 can chickpeas
  • 1 red bell pepper
  • 1/2 yellow bell pepper
  • 1 red onion
  • 3 handfuls lamb's lettuce
  • 7 radishes
  • 1 small can of corn
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon vegetable stock
  • 1 tablespoon soy sauce
  • 3 teaspoons agave syrup
  • 6 tablespoons olive oil

Preparation

  1. Chop the broccoli into small pieces and cook for about 2 minutes.

  2. Wash the chickpeas.

  3. Slice the bell peppers into small cubes.

  4. Cut the onion into small pieces.

  5. Wash the salad.

  6. Mix all together with the other ingredients.
