Exotic Crunchy Vegetable Salad
Ingredients
- 2 tbsp sesame seeds
- 4 carrots
- 1 red bell pepper
- 4 celery stalks
- 1 red onion
- 1/2 bunch cilantro
- 1/2 bunch parsley
- 1 piece ginger (about 20g)
- 2 tbsp soy sauce
- 1 tbsp agave syrup
- Juice of 1/2 lemon
- 2 tbsp olive oil
- 2 tbsp sesame oil
- Salt
- Pepper
Preparation
Peel the carrots and grate or slice them thinly
Cut the bell pepper into small strips
Cut the onion into very small pieces
Chop the cilantro
Peel the ginger and cut it into very small pieces
Mix with the olive oil, sesame oil, soy sauce, agave syrup, and lemon juice
Season with salt and pepper
Mix everything together well and let it sit in the fridge for 3 hours
Roast the sesame seeds in a pan until golden brown without oil; this takes about 2 minutes
Sprinkle the roasted sesame seeds over the salad
