Roasted Vegetable Quinoa Salad with Mustard Dressing

Ingredients

  • Broccoli
  • Courgette
  • Pepper
  • Red onion
  • Spinach
  • Rocket
  • Quinoa
  • Handful of walnuts & pumpkin seeds

Dressing

  • 2 tbsp olive oil
  • 1 tsp wholegrain mustard
  • 1 tsp maple syrup
  • 1 squeeze of lemon
  • Salt & pepper

Preparation

  1. Pre heat your oven to 19C.

  2. Cut the veggies into similar sizes (biggish chunks) drizzle with oil salt & pepper & roast for 30-40 mins.

  3. Prepare the quinoa according to package.

  4. Mix all the cooked veggies & salad leaves with the quinoa.

  5. Make the dressing & drizzle on top.

  6. Sprinkle over walnuts & pumpkin seeds.
