Roasted Vegetable Quinoa Salad with Mustard Dressing
Ingredients
- Broccoli
- Courgette
- Pepper
- Red onion
- Spinach
- Rocket
- Quinoa
- Handful of walnuts & pumpkin seeds
Dressing
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 tsp maple syrup
- 1 squeeze of lemon
- Salt & pepper
Preparation
Pre heat your oven to 19C.
Cut the veggies into similar sizes (biggish chunks) drizzle with oil salt & pepper & roast for 30-40 mins.
Prepare the quinoa according to package.
Mix all the cooked veggies & salad leaves with the quinoa.
Make the dressing & drizzle on top.
Sprinkle over walnuts & pumpkin seeds.
