Southern Style Vegan Biscuits and Gravy
Ingredients
Biscuits
- 4 cups all purpose flour
- 4 Tbsp baking powder
- 1 tsp salt
- 1 Tbsp sugar
- 2/3 cup room temperature shortening
- 2 cups unsweetened oat milk
- 1 Tbsp apple cider vinegar
Gravy
- 1 pound vegan sausage
- 3 Tbsp vegan butter
- 3 Tbsp all purpose flour
- 1 tsp salt
- 1/4 tsp white pepper
- 3 cups unsweetened oat milk
Preparation
Biscuits
Preheat oven to 400 F.
Whisk the milk and vinegar together and set aside.
Whisk the flour, baking powder, sugar, and salt in a large bowl.
Cut in the shortening until it looks like gravel.
Using a heavy spoon mix in the milk until no dry remains.
Dump onto a floured surface and use your hands to press it into a mound then flatten until 1 inch thick.
Coat the top with a little milk.
Cut into 3 inch squares roughly 15 and use your hands to shape into rounds.
Place on a parchment lined baking sheet.
Bake for 15-18 minutes until the tops are slightly browned.
Gravy
Crumble or cut the sausage into small pieces.
Cook in a large frying pan until just browned.
Remove but keep any oil in the pan.
Melt the butter then whisk in the flour and salt and pepper.
Add milk and heat while whisking until bubbling and thick.
Add in the cooked sausage.
Serve over biscuits.
