Light and Tender Vegan Lemon Donuts

Ingredients

  • 1/4 cup vegan butter, softened
  • 1/3 cup sugar
  • 3 tablespoons aquafaba
  • Zest of 1 lemon
  • 1/2 cup almond milk
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Glaze

  • 3/4 cup powdered sugar
  • 1 1/2-2 tablespoons lemon juice

Preparation

  1. Preheat the oven to 180C.

  2. Grease a donut pan and set aside.

  3. In a mixing bowl, mix together the softened vegan butter and sugar.

  4. Add the aquafaba and whisk until mixed into the butter and sugar mixture.

  5. Add the lemon zest, lemon extract and almond milk and mix until evenly combined.

  6. Add the flour, baking powder and salt and carefully stir the batter.

  7. Using a small spoon, add the donut batter to the prepared donut pan.

  8. Bake for 12 minutes, or until a tester comes out clean.

  9. Let the donuts cool for 2-3 minutes and then transfer them to a cooling rack.

  10. Once the donuts have cooled, in a shallow bowl add the powdered sugar and lemon juice and whisk until you have a smooth glaze.

  11. Dip the donut tops in the glaze.
