Spicy Sweet Peanut Anchovy Sambal
Ingredients
- 500 grams fried peanuts
- 100 grams fried anchovies
- Handful of dried chilies, boiled until soft and seeds removed
- 5 small shallots
- 2 garlic cloves
- Generous amount of oil
- Salt, to taste
- Sugar, use more for shine and flavor
- MSG (such as Aji-no-moto), to taste
Preparation
Boil the dried chilies until soft, then remove the seeds
Blend the boiled chilies, shallots, and garlic until fine
Heat a generous amount of oil in a pan and sauté the blended mixture until the oil separates
Add salt, sugar, and MSG, then cook until the sambal is dark and shiny
Cool the sambal before mixing
Mix the sambal with the fried peanuts and anchovies to maintain crispness
Tips
Use more sugar to achieve a shiny texture and a sweet-spicy balance
