Red Chili Beef Sambal
Ingredients
Coarsely ground
- 12 dried chilies
- 15 red chilies
- Optional: 6 red bird's eye chilies
- 6 garlic cloves
- 15 shallots
- 3 large ripe tomatoes
- 1 inch shrimp paste
Other
- 1 piece asam gelugur
- 1 cup cooking oil
- Salt to taste
- 2 tablespoons brown or white sugar
- 1 chicken or beef cube
- 1 kg beef, cut into medium-thin slices
Preparation
Boil the beef with a little water until cooked.
Remove the beef and pound each piece lightly to make it thinner but not too thin, to avoid it becoming tough when fried.
Heat oil in a wok.
Add the coarsely ground ingredients and stir for 10 minutes.
Add salt, chicken or beef cube, sugar, and asam gelugur or lime juice.
Add the prepared beef.
Fry until the color is nicely red and the sauce is slightly dry but still a bit wet.
Serve.
