Green Sambal Chicken with Petai
Ingredients
- 1/2 chicken
- Petai (to taste)
- 1 chicken stock cube
- Salt to taste
- Sugar to taste
Sambal paste
- 1 onion
- 5 garlic cloves
- 15 bird's eye chilies
- 3 green chilies
- Optional: a little belacan
Preparation
Wash the chicken and drain it, then mix with turmeric powder and salt.
Fry the chicken until half cooked.
Blend the sambal paste ingredients.
Using the excess oil from frying the chicken, sauté the blended mixture until somewhat crispy.
Add petai and chicken stock cube, and cook.
Add the chicken back and mix well.
Season with salt and sugar to taste.
Remove from heat when done.
Tips
Best served hot with rice.
