Spicy Soy Sauce Chicken with Chili Sambal
Ingredients
- Chicken
- Turmeric powder
- Salt
- 2 stalks curry leaves
- 2 stalks lemongrass
- 3 tablespoons oyster sauce
- Sweet soy sauce to taste
- Tamarind juice
Spice blend
- 2 shallots
- 2 cloves garlic
- 2 red bird's eye chilies
- 1 tablespoon coriander seeds
Sambal components
- Red bird's eye chilies (adjust to taste)
- Green bird's eye chilies (adjust to taste)
- Red large chili
- 1 large onion
- 2 cloves garlic
- Lime juice
- Salt
- Sugar
Preparation
Marinate the chicken with turmeric powder and salt and cut into small pieces.
Fry the chicken until cooked and set aside.
Blend the spice blend ingredients until fine.
Heat oil and sauté the blended spice mixture until fragrant.
Add curry leaves and lemongrass and stir well.
Add oyster sauce followed by sweet soy sauce.
Add the fried chicken, tamarind juice, and a pinch of salt.
Stir briefly to coat the chicken with sauce.
Turn off heat and the dish is ready to serve.
Sambal cooking
Blend the sambal components until fine.
Heat oil and sauté the blended mixture until slightly dry.
Season with salt and sugar.
Add lime juice and cook briefly.
Turn off heat and the sambal is ready to serve.
Tips
Adjust the quantity of chilies to desired spice level.
Use Mahsuri brand sweet soy sauce for the chicken dish.
