Spicy and Sour Squid Stir-Fry

Ingredients

  • 300 grams squid
  • 1/2 tablespoon sweet soy sauce
  • Tamarind juice as needed
  • Water as needed
  • Salt to taste
  • Sugar to taste
  • Seasoning to taste

Ground

  • 3 cloves garlic
  • 5 shallots
  • 4 red chilies
  • 2 bird's eye chilies
  • 1 lemongrass stalk
  • 1/2 cm grilled turmeric

Preparation

  1. Clean the squid, remove the ink sac, secure the head with a skewer, and drain.

  2. Heat a pan with oil and sauté the ground ingredients until fragrant.

  3. Add sweet soy sauce, tamarind juice, water as needed, salt, sugar, and seasoning, then stir until the sauce slightly thickens.

  4. Add the squid and cook until done, then remove from heat and serve.
