Vegan Avocado Chickpea Mash on Bagels

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 ripe avocado, pit removed
  • 1 lemon
  • 2 spring onions, minced
  • 1 tablespoon capers or minced green olives
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Bagel
  • Mushrooms, sliced
  • Zucchini
  • Red pepper flakes
  • Everything but the bagel seasoning
  • Fresh basil, optional
  • Soy sauce
  • Smoked paprika
  • Vegetable broth
  • Maple syrup

Preparation

  1. Add chickpeas, avocado, and capers to a bowl and mash with a fork or potato masher until a mash forms, leaving some chickpeas for texture.

  2. Grate lemon zest into the mash.

  3. Juice the lemon over the mash.

  4. Add minced spring onions and garlic powder, then stir to combine.

  5. Adjust seasoning with salt and pepper to taste.

  6. Spread the mixture over a bagel or base of choice.

  7. Optionally top with sautéed mushrooms, zucchini, red pepper flakes, everything but the bagel seasoning, and fresh basil if desired.

Mushroom sauté

  1. Place sliced mushrooms in a pan with a pinch of salt and cook until water evaporates.

  2. Add a splash of soy sauce, a pinch of smoked paprika, and garlic powder.

  3. Add a splash of vegetable broth to deglaze the pan.

  4. Add a touch of maple syrup and cook until liquid is fully absorbed.
