Vegan Street Corn Nachos

Ingredients

  • 10 tortilla chips
  • 2 cups vegan cheese shreds
  • 1 cup corn, fresh or canned
  • 1/2 cup vegan mayonnaise
  • Juice of 1 lime
  • 1 teaspoon chili lime salt
  • 2 cloves garlic
  • 1/4 cup cilantro
  • Chili lime salt, to taste

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Place half of the tortilla chips on a sheet pan, then sprinkle half of the vegan cheese shreds and half of the corn on top.

  3. Top with the remaining tortilla chips, then the remaining vegan cheese shreds and corn.

  4. Bake for 6 to 8 minutes, or until the vegan cheese is melted and the corn is hot.

  5. While the nachos are baking, whisk together vegan mayonnaise, lime juice, chili lime salt, and minced garlic in a small bowl. Set aside.

  6. Drizzle the chili lime mayonnaise over the baked nachos, sprinkle with cilantro, and serve immediately.

Tips

  1. Trader Joe's brand of chili lime salt is recommended.
