Easy Baked Vegan Street Corn Nachos

Ingredients

  • 10 tortilla chips
  • 2 cups vegan cheese shreds
  • 1 cup corn, fresh or canned
  • 1/2 cup vegan mayonnaise
  • Juice of 1 lime
  • 1 teaspoon chili lime salt
  • 2 cloves garlic
  • 1/4 cup cilantro
  • Chili lime salt, for sprinkling

Preparation

  1. Preheat oven to 400 degrees.

  2. Place half the tortilla chips on a sheet pan, then sprinkle half the vegan cheese on top, followed by half the corn.

  3. Top with the remaining tortilla chips, then the remaining vegan cheese and corn.

  4. Bake for 6 to 8 minutes or until the vegan cheese is melted and the corn is hot.

  5. While the chips bake, whisk together vegan mayonnaise, lime juice, chili lime salt, and minced garlic in a small bowl. Set aside.

  6. Drizzle the chili lime mayonnaise over the nachos, then sprinkle with cilantro. Serve immediately.
