Easy Baked Vegan Street Corn Nachos
Ingredients
- 10 tortilla chips
- 2 cups vegan cheese shreds
- 1 cup corn, fresh or canned
- 1/2 cup vegan mayonnaise
- Juice of 1 lime
- 1 teaspoon chili lime salt
- 2 cloves garlic
- 1/4 cup cilantro
- Chili lime salt, for sprinkling
Preparation
Preheat oven to 400 degrees.
Place half the tortilla chips on a sheet pan, then sprinkle half the vegan cheese on top, followed by half the corn.
Top with the remaining tortilla chips, then the remaining vegan cheese and corn.
Bake for 6 to 8 minutes or until the vegan cheese is melted and the corn is hot.
While the chips bake, whisk together vegan mayonnaise, lime juice, chili lime salt, and minced garlic in a small bowl. Set aside.
Drizzle the chili lime mayonnaise over the nachos, then sprinkle with cilantro. Serve immediately.
