Vegan Sushi Balls with Chickpea Tuna
Ingredients
- 1 cup sushi rice
- 1 1/4 cups boiling water
- 2 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1 tsp salt
- 1/2 can chickpeas
- 1 tbsp sriracha or harissa
- 3 tbsp vegan mayo
- 1 nori sheet
- Juice from 1/2 a lemon
- Veggies of choice (e.g., avocado, cucumber, carrot)
- Sesame seeds
Preparation
Rinse rice with cold water until the water runs clear
Transfer into a pot with boiling water, top with a lid and cook for about 15 minutes or until cooked
Season the cooked rice with vinegar, maple syrup, sesame oil and salt
Use a spatula to very gently fold the rice
Chill the rice
Meanwhile make the vegan spicy tuna by mashing chickpeas using a fork
Top with sriracha, vegan mayo, nori and lemon juice
Mix well
Cut veggies of choice into small cubes
Scoop about 1/3 cup of cooked rice and place in the center of a plastic wrap
Press it down
Top with spicy tuna and veggies
Fold in the corners of the plastic wrap and twist it to form a ball
Squeeze a bit to make sure everything stays in place
Coat with sesame seeds
Garnish with spring onions and serve with your favorite sauce
