Vegan Sushi Balls with Chickpea Tuna

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups boiling water
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp sesame oil
  • 1 tsp salt
  • 1/2 can chickpeas
  • 1 tbsp sriracha or harissa
  • 3 tbsp vegan mayo
  • 1 nori sheet
  • Juice from 1/2 a lemon
  • Veggies of choice (e.g., avocado, cucumber, carrot)
  • Sesame seeds

Preparation

  1. Rinse rice with cold water until the water runs clear

  2. Transfer into a pot with boiling water, top with a lid and cook for about 15 minutes or until cooked

  3. Season the cooked rice with vinegar, maple syrup, sesame oil and salt

  4. Use a spatula to very gently fold the rice

  5. Chill the rice

  6. Meanwhile make the vegan spicy tuna by mashing chickpeas using a fork

  7. Top with sriracha, vegan mayo, nori and lemon juice

  8. Mix well

  9. Cut veggies of choice into small cubes

  10. Scoop about 1/3 cup of cooked rice and place in the center of a plastic wrap

  11. Press it down

  12. Top with spicy tuna and veggies

  13. Fold in the corners of the plastic wrap and twist it to form a ball

  14. Squeeze a bit to make sure everything stays in place

  15. Coat with sesame seeds

  16. Garnish with spring onions and serve with your favorite sauce
