Watermelon Cucumber Salad with Feta and Edamame
Ingredients
- 3 Persian cucumbers
- 1/4 watermelon
- 1 cup edamame
- 1 cup arugula
- 6 ounces feta cheese
- Fresh thyme
- Olive oil
- Balsamic vinegar
- Flakey salt
Preparation
Slice the Persian cucumbers
Chop the watermelon into 1-inch cubes
Chop the arugula if not already done
Crumble the feta cheese
In a large bowl, combine the sliced cucumbers, chopped watermelon, edamame, chopped arugula, and crumbled feta cheese
Drizzle with olive oil and balsamic vinegar to taste
Sprinkle with flakey salt
Garnish with fresh thyme if desired
Serve immediately
Notes
Thyme, balsamic vinegar, and arugula amounts can be adjusted based on preference
