Simple and Delicious Vegan Caprese Salad

Ingredients

  • Large heirloom tomato
  • 1/2 package Miyoko's Creamery mozzarella
  • Basil leaves
  • Micro greens
  • Olive oil
  • Balsamic vinegar
  • Salt and pepper

Preparation

  1. Slice the tomato and mozzarella.

  2. Arrange the slices on a plate.

  3. Tuck basil leaves between each slice.

  4. Season with salt and pepper and drizzle with olive oil and balsamic vinegar.

Tips

  1. Optionally garnish with micro greens.
