Simple Vegan Caprese Salad

Ingredients

  • Large heirloom tomato
  • 1/2 package Miyoko's Creamery mozzarella
  • Basil leaves
  • Micro greens
  • Olive oil
  • Balsamic vinegar
  • Salt
  • Pepper

Preparation

  1. Arrange the slices of tomato and mozzarella on a plate

  2. Tuck basil leaves between each slice

  3. Season with salt and pepper and drizzle with olive oil and balsamic vinegar
