Crispy Baked Spiced Chickpeas

Ingredients

  • 1/2 onion
  • 1 clove of garlic
  • 1 thumb of ginger
  • 2 cans of chickpeas
  • 1 stick of scallion
  • 1 handful of kale
  • 2 tbsp mango chutney
  • 2 tbsp tomato puree
  • 1 tbsp nutritional yeast
  • A sprinkle of salt
  • A sprinkle of pepper
  • A sprinkle of chili powder
  • Oil

Preparation

  1. In a pan, add oil, onion, garlic, and ginger and fry for one minute before adding the rest of the ingredients.

  2. Stir everything together on medium heat.

  3. For optional crispiness, pour the mixture into a baking dish and bake in the oven at 200 degrees for 15 to 17 minutes.

Tips

  1. Serve with rice, arugula, cucumber, and avocado for a complete meal.

  2. This recipe makes crispy chickpeas with a soft inside and is vegan.
