Green Goddess Lentil Nourish Bowl

Ingredients

Bowl

  • 1 cup green lentils
  • 1 bunch lacinato kale
  • 2 zucchinis
  • 2 English cucumbers
  • 2 cups green peas
  • 3 cups green beans
  • 1/4 cup pumpkin seeds
  • 1/4 cup fresh parsley

Green goddess sauce

  • 3 lemons, juiced
  • 1/2 cup plain coconut milk yogurt or 1 ripe avocado
  • 1 jalapeño
  • 1/2 bunch cilantro
  • 1/2 bunch parsley
  • handful of mint
  • 1 garlic clove
  • salt and pepper
  • 1 tsp maple syrup
  • 1 tbsp fresh ginger
  • 1/2 cup water

Preparation

  1. Bring a medium pot of water to a boil. Add lentils and simmer for 12-15 minutes until tender but not mushy.

  2. Add all ingredients for the sauce to a blender and purée until creamy. Season to taste.

  3. Prepare the kale by chopping it, drizzling with juice from 1 lemon and 1 teaspoon extra virgin olive oil, and massaging until tender. Blanch the green beans. Add all ingredients to bowls and drizzle with sauce right before serving.

Notes

  1. This recipe serves 6 and is great for meal prep.
