Green Goddess Lentil Nourish Bowl
Ingredients

- 1 cup green lentils
- 1 bunch lacinato kale
- 2 zucchinis
- 2 English cucumbers
- 2 cups green peas
- 3 cups green beans
- 1/4 cup pumpkin seeds
- 1/4 cup fresh parsley
Green goddess sauce
- 3 lemons, juiced
- 1/2 cup plain coconut milk yogurt or 1 ripe avocado
- 1 jalapeño
- 1/2 bunch cilantro
- 1/2 bunch parsley
- handful of mint
- 1 garlic clove
- salt and pepper
- 1 tsp maple syrup
- 1 tbsp fresh ginger
- 1/2 cup water
Preparation
Bring a medium pot of water to a boil. Add lentils and simmer for 12-15 minutes until tender but not mushy.
Add all ingredients for the sauce to a blender and purée until creamy. Season to taste.
Prepare the kale by chopping it, drizzling with juice from 1 lemon and 1 teaspoon extra virgin olive oil, and massaging until tender. Blanch the green beans. Add all ingredients to bowls and drizzle with sauce right before serving.

This recipe serves 6 and is great for meal prep.
