Light and Crunchy Chickpea Salad

Ingredients

  • 1 bell pepper
  • 10-15 cherry tomatoes
  • 1 can Chickpea
  • 1/2-1 red onion
  • Parsley
  • Coriander
  • Lime juice
  • Salt pepper

Preparation

  1. Drain and rinse the chickpeas from the can

  2. Chop the bell pepper, red onion, parsley, and coriander

  3. Halve the cherry tomatoes

  4. In a large bowl, combine all the chopped vegetables and chickpeas

  5. Add lime juice, salt, and pepper to taste and mix well

  6. Serve the salad immediately or refrigerate for later
