Light and Crunchy Chickpea Salad
Ingredients
- 1 bell pepper
- 10-15 cherry tomatoes
- 1 can Chickpea
- 1/2-1 red onion
- Parsley
- Coriander
- Lime juice
- Salt pepper
Preparation
Drain and rinse the chickpeas from the can
Chop the bell pepper, red onion, parsley, and coriander
Halve the cherry tomatoes
In a large bowl, combine all the chopped vegetables and chickpeas
Add lime juice, salt, and pepper to taste and mix well
Serve the salad immediately or refrigerate for later
