Pumpkin Spiced Mulberry Overnight Oats with Peanut Butter

Ingredients

  • 0.5 cup rolled oats (gluten free if you want)
  • 1/4 cup mulberries
  • 2 tbsp chia seeds
  • 1 tsp pumpkin spice
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter
  • 1 cup plant-based milk (for example oat, almond or soy)

Toppings

  • 1 sliced persimmon
  • 1 tbsp @gogoquinoa quinoa puffs
  • 1 tbsp slivered almonds
  • 1 tbsp peanut butter
  • Optional: a dash of pumpkin spice

Preparation

  1. Stir the oats, mulberries, chia seeds, pumpkin spice, maple syrup, peanut butter, and milk in a jar or bowl.

  2. You can even add the toppings in the evening if you want.

  3. Cover and let sit overnight in the fridge.
