Pumpkin Spiced Mulberry Overnight Oats with Peanut Butter
Ingredients
- 0.5 cup rolled oats (gluten free if you want)
- 1/4 cup mulberries
- 2 tbsp chia seeds
- 1 tsp pumpkin spice
- 1 tbsp maple syrup
- 1 tbsp peanut butter
- 1 cup plant-based milk (for example oat, almond or soy)
Toppings
- 1 sliced persimmon
- 1 tbsp @gogoquinoa quinoa puffs
- 1 tbsp slivered almonds
- 1 tbsp peanut butter
- Optional: a dash of pumpkin spice
Preparation
Stir the oats, mulberries, chia seeds, pumpkin spice, maple syrup, peanut butter, and milk in a jar or bowl.
You can even add the toppings in the evening if you want.
Cover and let sit overnight in the fridge.
