Pumpkin Oats Breakfast Bowl with Toppings

Ingredients

  • 1 cup unsweetened almond milk
  • 1/2 cup rolled oats
  • 1/3 cup pumpkin purée
  • 1/2 tsp cinnamon
  • 2 tsp maple syrup
  • 1 scoop unflavored protein powder

Toppings

  • frozen blueberries
  • chia seeds
  • peanut butter
  • dark chocolate chunks
  • maple butter

Preparation

  1. Bring 1 cup unsweetened almond milk to a boil and cook 1/2 cup rolled oats.

  2. Once most of the liquid is absorbed, stir in 1/3 cup pumpkin purée, 1/2 tsp cinnamon, 2 tsp maple syrup, and 1 scoop unflavored protein powder.

  3. Top with frozen blueberries, chia seeds, peanut butter, dark chocolate chunks, and maple butter.
