Shrimp Poke Bowls with Spicy Mayo

Ingredients

  • 1 lb frozen shrimp
  • 1 tsp smoked paprika
  • 1 tsp brown sugar
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 cup edamame
  • 1 carrot
  • 1/2 cucumber
  • 1 green onion
  • Cooked rice
  • 1/4 cup mayonnaise
  • 2 tbsp hot sauce
  • Splash of soy sauce

Preparation

  1. Defrost the shrimp.

  2. Pat them dry with a paper towel. Add to a small bowl with spices and olive oil and let sit for 10 minutes.

  3. Meanwhile, cook the rice and dice the vegetables.

  4. Heat a large skillet on medium heat, add a splash of oil once hot, and add the shrimp.

  5. Spread them apart, cook for 3 minutes, flip, and cook for another 2 minutes. Remove from heat.

  6. Whisk together the mayonnaise and hot sauce or chili oil.

  7. Assemble the bowls with rice, shrimp, edamame, vegetables, drizzle with the mayo mixture, and add a splash of soy sauce.
