Vegan Poke Bowl with Smoked Carrot Salmon
Ingredients
- Red cabbage
- Peanuts
- Sliced radish
- Sliced cucumber
- Shelled edamame
- Avocado
- Quinoa
- Lemongrass tamarind tofu with spring onion, cayenne pepper and toasted and black sesame seeds
Vegan smoked salmon components
- 3-4 large carrots
- 2 tbsp neutral oil
- 1.5 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tsp toasted sesame oil
- 1 tsp maple syrup
- 1 tsp liquid smoke
- 0.5 tsp salt
- 0.5 tsp pepper
Preparation
Steam the carrots for about 5 minutes and let cool to room temperature.
Whisk together the neutral oil, soy sauce, rice wine vinegar, toasted sesame oil, maple syrup, liquid smoke, salt, and pepper.
Add the carrots to the marinade, stir, then transfer to an airtight container and refrigerate overnight.
Assemble the poke bowl by combining the ingredients in a bowl.
Tips
The vegan smoked salmon can also be enjoyed in a sandwich or bagel as an alternative use.
