Vegan Poke Bowl with Smoked Carrot Salmon
Ingredients
- Red cabbage
- Peanuts
- Radish
- Cucumber
- Edamame
- Avocado
- Quinoa
- Vegan smoked salmon
- Lemongrass tamarind tofu
- Spring onion
- Cayenne pepper
- Toasted sesame seeds
- Black sesame seeds
Vegan smoked salmon
- 3-4 large carrots
- 2 tablespoons neutral oil
- 1.5 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon toasted sesame oil
- 1 teaspoon maple syrup
- 1 teaspoon liquid smoke
- 0.5 teaspoon salt
- 0.5 teaspoon pepper
Preparation
Steam the carrots for about 5 minutes or so then let cool to room temperature.
Meanwhile, whisk together the marinade ingredients.
Add the carrots to the marinade, stir, then transfer to an airtight container and refrigerate overnight.
Assemble the poke bowl by combining all ingredients in a bowl.
Tips
This vegan smoked salmon can also be enjoyed in sandwiches or bagels.
