Speedy Sweetcorn Korma

Ingredients

  • 1 onion, roughly chopped⁣
  • 2 cloves of garlic, sliced⁣
  • 1 tsp ground cumin ⁣
  • 1 tsp sweet smoked paprika ⁣
  • 1 tin of sweetcorn⁣
  • 1 can of coconut milk⁣
  • 1 tin butterbeans⁣
  • handful of chopped coriander ⁣
  • 140g tofu, cubed
  • 125g baby corn⁣

Preparation

  1. Steam the baby corn for 5 minutes

  2. In the meantime, brown the onions and garlic in a little olive oil

  3. Add the spices and cook for a minute

  4. Add the sweetcorn, coconut milk and butterbeans

  5. Using a hand blender or food processor, blend the mixture then return to the pan

  6. Add the coriander and tofu
