Aubergine and Chickpea Coconut Curry
Ingredients
- onion
- aubergine
- peppers
- pineapple and mushrooms
- sp turmeric
- cumin
- chilli
- coriander
- a tin of coconut milk
- 400ml veg stock and two handfuls of spinach
- basmati rice
Preparation
Made this by first frying onion, aubergine, peppers, pineapple and mushrooms in oil and then once softened added garlic and ginger and fried for a further couple of minutes
Then I added tsp turmeric, cumin, chilli, coriander and fried for couple more minutes
Then I added a tin of coconut milk, 400ml veg stock and two handfuls of spinach and bought to boil then simmered for 15-20 minutes
Once it had reduced I served it with basmati rice
