Aubergine and Chickpea Coconut Curry

Ingredients

  • onion
  • aubergine
  • peppers
  • pineapple and mushrooms
  • sp turmeric
  • cumin
  • chilli
  • coriander
  • a tin of coconut milk
  • 400ml veg stock and two handfuls of spinach
  • basmati rice

Preparation

  1. Made this by first frying onion, aubergine, peppers, pineapple and mushrooms in oil and then once softened added garlic and ginger and fried for a further couple of minutes

  2. Then I added tsp turmeric, cumin, chilli, coriander and fried for couple more minutes

  3. Then I added a tin of coconut milk, 400ml veg stock and two handfuls of spinach and bought to boil then simmered for 15-20 minutes

  4. Once it had reduced I served it with basmati rice
