Spicy Meatless Three Bean Chilli
Ingredients
- One large onion, chopped
- Two cloves garlic, chopped
- Two tablespoons olive oil
- 1 400g pack meatless farm mince
- 2 tsp ground coriander
- 2 tsp ground cinnamon
- 1 tsp ground cumin
- 1 tsp chilli powder
- 2 tbsp tomato puree
- 1 can chopped tomatoes
- 1 veg stock cube
- 1 can kidney beans, drained
- 1 can chickpeas drained
Preparation
Cook the onion in the olive oil over medium heat for about 7 minutes.
Add the mince and cook for a further 5-7 minutes, making sure you keep stirring to break up the mince
Add the garlic and cook for another minute or so
Add the spices and cook for a couple of minutes stirring continuously
Add the tomato purée, mix through well and cook for a couple of minutes
Add the chopped tomatoes
Fill the can with water and add this too
Add the veg stock
Add the kidney beans and chickpeas
Mix well, bring to a simmer and cook for 15 minutes
Season and serve with roast sweet potatoes, rice, or baked potato for a delicious sweet and spicy combination.
