Spicy Meatless Three Bean Chilli

Ingredients

  • One large onion, chopped
  • Two cloves garlic, chopped
  • Two tablespoons olive oil
  • 1 400g pack meatless farm mince
  • 2 tsp ground coriander
  • 2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 2 tbsp tomato puree
  • 1 can chopped tomatoes
  • 1 veg stock cube
  • 1 can kidney beans, drained
  • 1 can chickpeas drained

Preparation

  1. Cook the onion in the olive oil over medium heat for about 7 minutes.

  2. Add the mince and cook for a further 5-7 minutes, making sure you keep stirring to break up the mince

  3. Add the garlic and cook for another minute or so

  4. Add the spices and cook for a couple of minutes stirring continuously

  5. Add the tomato purée, mix through well and cook for a couple of minutes

  6. Add the chopped tomatoes

  7. Fill the can with water and add this too

  8. Add the veg stock

  9. Add the kidney beans and chickpeas

  10. Mix well, bring to a simmer and cook for 15 minutes

  11. Season and serve with roast sweet potatoes, rice, or baked potato for a delicious sweet and spicy combination.
