Vanilla Chia Pudding Raspberry Nice Cream Parfait

Ingredients

Chia pudding

  • 35g chia seeds
  • 15g vanilla protein
  • 250ml non-dairy milk

Raspberry nice cream

  • 1 large frozen banana
  • 80g frozen raspberries
  • 15g wild berry protein powder
  • dash of non-dairy milk

Preparation

  1. Soak the chia pudding ingredients in a jar overnight to prepare for layering.

  2. In the morning, blitz the raspberry nice cream ingredients in a blender until smooth and creamy.

  3. Layer the soaked chia pudding and the blended nice cream to assemble the parfait.

  4. Chia seeds are full of omega 3 fatty acids, which are great for a vegan diet, and are rich in fibre and protein to fuel your day.
