Vegetable Stir Fry

Ingredients

  • carrots - 1 cup carrots peeled and cut into 1/2 inches cubes / frozen
  • peas - 1 cup fresh or frozen
  • potatoes - 2 medium size cut lengthwise
  • oil - 2 tbsp
  • cumin seeds - 1tsp
  • turmeric powder- 1tsp
  • salt to taste
  • mango powder - 1tsp or lemon juice
  • red chilli powder- 1/2 tsp
  • ginger paste - 1tsp
  • fresh corriander- chopped 1/4 cup
  • green chillies - optional

Preparation

  1. Heat oil in a non stick pan , add cumin seeds and saute till it changes its color , add ginger and saute for few seconds ,add potatoes, carrots mix well and cook for 3 to 4 minutes

  2. Cover it with the lid

  3. Take the lid off mix well , add turmeric powder, red chilli powder, salt and mix well , add peas , cover and cook on low heat for 2 - 3 minutes

  4. Add Dried mango powder, toss well

  5. Remove from heat and sprinkle corriander leaves and Trasfer into a serving bowl

  6. Serve with Naan , Roti or fill it in any Pita bread

  7. You can even add a 1tsp of Tava Fry Masala bought from any Indian store but that's optional
