Vegetable Stir Fry
Ingredients
- carrots - 1 cup carrots peeled and cut into 1/2 inches cubes / frozen
- peas - 1 cup fresh or frozen
- potatoes - 2 medium size cut lengthwise
- oil - 2 tbsp
- cumin seeds - 1tsp
- turmeric powder- 1tsp
- salt to taste
- mango powder - 1tsp or lemon juice
- red chilli powder- 1/2 tsp
- ginger paste - 1tsp
- fresh corriander- chopped 1/4 cup
- green chillies - optional
Preparation
Heat oil in a non stick pan , add cumin seeds and saute till it changes its color , add ginger and saute for few seconds ,add potatoes, carrots mix well and cook for 3 to 4 minutes
Cover it with the lid
Take the lid off mix well , add turmeric powder, red chilli powder, salt and mix well , add peas , cover and cook on low heat for 2 - 3 minutes
Add Dried mango powder, toss well
Remove from heat and sprinkle corriander leaves and Trasfer into a serving bowl
Serve with Naan , Roti or fill it in any Pita bread
You can even add a 1tsp of Tava Fry Masala bought from any Indian store but that's optional
