Crispy Salt and Pepper Cauliflower

Ingredients

  • 1 cauliflower⁣
  • 1/2 cup rice flour⁣
  • little less than 1/2 cup water⁣
  • 1/2 tsp salt⁣
  • large pinch white pepper⁣
  • 5 tbs oil⁣
  • dipping sauce
  • 2 tbs lime juice⁣
  • 3 tbs light soy⁣
  • 1 tsp sugar of choice
  • 1 clove garlic, minced⁣
  • 2 birds eye chillies, finely chopped⁣

Preparation

  1. Make sauce by mixing all sauce ingredients together until sugar dissolved.⁣

  2. Whisk rice flour salt and pepper in a bowl to make a batter. Cut cauliflower in half. Take one half and from the middle carefully cut a 1-inch 'steak' being careful to keep all the florets connected. Bathe cauliflower slab in the batter, making sure the batter not only coats the outside but reaches the inside in between the florets.⁣

  3. Heat a wok or pan and add your vegetable oil. Fry cauliflower for about 3 mins on one side checking regularly to make sure your not blackening it. Repeat for the#other side. You should have a crispy, slightly charred looking slab of cauliflower that is crunchy on the outside, soft & tender on the inside. Serve as a component of a larger meal, or serve by its own with steamed rice
