Vegan Poppy Seed and Lemon Loaf

Ingredients

  • 350g flour
  • 2 tbsp poppy seeds
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp tonka or vanilla powder
  • 200g brown sugar
  • pinch of salt
  • 190ml plant-based milk
  • 5 tbsp lemon juice
  • 75g coconut oil
  • 1 tbsp apple cider vinegar

Preparation

  1. In a bowl, mix 350g flour, 2 tbsp poppy seeds, 2 tsp baking powder, 1 tsp baking soda, 1/2 tsp tonka or vanilla powder, 200g brown sugar, and a pinch of salt.

  2. In another bowl, mix 190ml plant-based milk, 5 tbsp lemon juice, 75g coconut oil, and 1 tbsp apple cider vinegar.

  3. Fold the wet mixture into the dry mixture without overmixing; lumps are allowed.

  4. Pour the batter into a greased pan.

  5. Bake at 180°C/350°F for 40-50 minutes.
