Vegan Poppy Seed and Lemon Loaf
Ingredients
- 350g flour
- 2 tbsp poppy seeds
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp tonka or vanilla powder
- 200g brown sugar
- pinch of salt
- 190ml plant-based milk
- 5 tbsp lemon juice
- 75g coconut oil
- 1 tbsp apple cider vinegar
Preparation
In a bowl, mix 350g flour, 2 tbsp poppy seeds, 2 tsp baking powder, 1 tsp baking soda, 1/2 tsp tonka or vanilla powder, 200g brown sugar, and a pinch of salt.
In another bowl, mix 190ml plant-based milk, 5 tbsp lemon juice, 75g coconut oil, and 1 tbsp apple cider vinegar.
Fold the wet mixture into the dry mixture without overmixing; lumps are allowed.
Pour the batter into a greased pan.
Bake at 180°C/350°F for 40-50 minutes.
