Chicken Pulao with Aromatic Spices

Ingredients

  • 2 cups rice
  • 500g chicken pieces
  • Salt to taste
  • 2 cardamom pods
  • 2 peppercorns
  • 2 cloves
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chilli powder
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 2 slit green chillies
  • 1 medium onion
  • Dash of turmeric powder
  • 4-5 tablespoons yoghurt
  • Oil as needed

Garnish

  • Fresh coriander leaves
  • Lemon slices

Preparation

  1. Marinate the chicken in salt, ginger-garlic paste, coriander powder, and cumin powder.

  2. Add the whole spices and green chillies to the marinated chicken and mix well.

  3. Heat oil in a pot and add chopped onions; sauté on medium heat until they are glossy and transparent.

  4. Add the marinated chicken and cook until the ingredients are well incorporated.

  5. Add yoghurt and cook for a few minutes.

  6. Add the rice and 4 cups of water, using double the amount of water as rice.

  7. Sprinkle in the turmeric powder and the remaining ginger-garlic paste.

  8. Season with salt and mix well.

  9. Stir occasionally and cook until the rice is completely done.

  10. Garnish with fresh coriander leaves and lemon slices.

  11. Serve with sour milk.
