Chicken Pulao with Aromatic Spices
Ingredients
- 2 cups rice
- 500g chicken pieces
- Salt to taste
- 2 cardamom pods
- 2 peppercorns
- 2 cloves
- 2 cinnamon sticks
- 2 bay leaves
- 2 tablespoons ginger-garlic paste
- 1 tablespoon red chilli powder
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 2 slit green chillies
- 1 medium onion
- Dash of turmeric powder
- 4-5 tablespoons yoghurt
- Oil as needed
Garnish
- Fresh coriander leaves
- Lemon slices
Preparation
Marinate the chicken in salt, ginger-garlic paste, coriander powder, and cumin powder.
Add the whole spices and green chillies to the marinated chicken and mix well.
Heat oil in a pot and add chopped onions; sauté on medium heat until they are glossy and transparent.
Add the marinated chicken and cook until the ingredients are well incorporated.
Add yoghurt and cook for a few minutes.
Add the rice and 4 cups of water, using double the amount of water as rice.
Sprinkle in the turmeric powder and the remaining ginger-garlic paste.
Season with salt and mix well.
Stir occasionally and cook until the rice is completely done.
Garnish with fresh coriander leaves and lemon slices.
Serve with sour milk.
