Blueberry Topped French Toast Treat

Ingredients

  • 2 large eggs
  • 1/4 cup almond milk (unsweetened)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • pinch of salt
  • 4 slices bread
  • unsalted butter for cooking

Preparation

  1. In a shallow pan, add eggs, milk, vanilla, half of cinnamon, and salt. Whisk until well combined.

  2. Dip each side of the bread in egg mixture. Add the other half of cinnamon after you have dipped half of your bread slices and mix again. This will make sure all of the slices get a good amount of cinnamon.

  3. Melt a little butter in pan over medium heat. Cook the toast until golden brown, about 2-3 minutes on each side.

  4. Serve the French toast warm with maple syrup, powdered sugar and berries if desired.

  5. Just before serving add toppings of choice! ENJOY! To keep French toast warm, heat the oven to 180 degrees. Place a wire rack on a large baking sheet and place the French toast on the rack. Keep warm in the oven for up to 30 minutes.
