Homemade Vegan Courgette Lasagna with Garlic Butter Dough Balls
Ingredients
- 1 courgette
- 80g soy mince
- 100g tomato sauce
- some spinach
- 20g vegan grated cheese
Dough components
- 40g spelt flour
- 10g protein powder
- 40g unsweetened soy yogurt
- 7g vegan butter
- 1/2 teaspoon garlic powder
Preparation
Mix the soy mince, tomato sauce and spinach in a pot and allow to cook.
Slice the courgette into thin slices and place the first layer at the bottom of a single serve baking tray.
When cooked, layer the soy mince, tomato sauce and spinach between the courgette sheets, top with the vegan cheese and place in the oven for 20 minutes.
Serve with green beans and dough balls.
Dough method
Mix the dough ingredients together.
Separate into 2 portions, flatten, spread the garlic butter, and roll into two balls.
Place on a baking tray lined with baking paper and bake in the oven for 20 minutes.
Remove from oven and serve.
