Homemade Spelt Pizza with Grilled Vegetables

Ingredients

  • 1 1/2 cups of warm water
  • 600 grams of spelt flour
  • 1/2 teaspoon maple syrup
  • 2 teaspoons of instant yeast
  • 1 teaspoon of salt
  • 1/4 cup olive oil
  • extra olive oil for brushing

Tomato sauce

  • 1 tablespoon of olive oil
  • 2 garlic cloves crushed
  • 2 tablespoons of basil
  • 1 teaspoon of salt and pepper
  • 1/2 teaspoon maple syrup

Preparation

  1. In a fry pan add 1 tablespoon of olive oil, 1 teaspoon of salt, pepper, garlic and basil and sauté for 5 minutes then add the crushed tomatoes. Cook for 20 minutes on low heat.

  2. In a bowl combine water, maple syrup, yeast. Set aside for 5 minutes.

  3. In a mixing bowl with a dough hook add the flour, salt, yeast mixture and oil and knead for 15 minutes.

  4. Cover the dough and allow it to rise for 4 hours in a warm area.

  5. Once the dough has risen cut into 3 sections.

  6. Brush the pizza trays with olive oil and spread the dough out.

  7. Add the sauce and any topping you prefer, such as grilled eggplants, zucchini, and peppers.
