Homemade Fluffy Pizza with Crispy Edges
Ingredients
- 2 1/4 tsp instant yeast
- 2 tsp sugar
- 200ml warm water
- 2 1/4 cup spelt flour
- pinch of salt

Preparation
Combine water, yeast, and sugar in a bowl and leave it for 10 minutes to froth up.
Combine salt and flour.
Add the water mixture to the flour mixture and stir.
Knead until a soft ball forms.
Transfer to a clean bowl and coat with olive oil.
Cover with a towel and let rise in a warm place for an hour.
Roll out to desired shape and add toppings.
Place on a baking sheet or pizza stone with a generous layer of cornmeal to prevent sticking and ensure extra crispiness.
Bake at 425F for 25 minutes.
