Quinoa Stuffed Peppers

Ingredients

  • 6 bell peppers
  • 2 cups cooked quinoa and rice mix
  • 2 tbs olive oil
  • 1/2 brown onion (diced)
  • 3 cloves garlic (minced)
  • 100g baby corn (diced)
  • 1 carrot (peeled and diced)
  • 100g green beans (diced).
  • cumin and paprika to taste
  • 1/4 cup toasted pine nuts
  • s & p to taste

Preparation

  1. Heat olive oil in a large skillet over med-high heat

  2. Add onions, garlic, corn, carrot, beans and season with cumin, paprika, salt and pepper

  3. Sauté for 5 minutes until veggies are soft

  4. Increase to high and add the cooked quinoa and rice and still until all combined

  5. Throw in pine nuts now

  6. Stir well to combine and then remove off heat

  7. To prepare peppers - cut the 'lids' off with knife and discard all the seeds

  8. Fill the peppers, then place the stuffed peppers prepared baking dish and bake at 180° for about 30-35min or until the peppers are softened but not too mushy!

  9. Enjoy them as is or with some yoghurt or cheese over the top!
